The Popal Group's Executive Pastry Chef Isabel Coss and Executive Chef Matt Conroy will be opening a new contemporary Mexican restaurant, Pascual, this December. The culinary partners/spouses have always dreamt of opening this new concept, as they both have years of experience working in some of the best Mexican restaurants. The menu at Pascual will be hearth-focused and aims to bring a taste of Mexico City to Capitol Hill. A few weeks after the initial opening, Pascual will open its daytime panaderia and coffee shop, Volcan. Volcan will operate as a to-go window, serving coffee and treats for pick-up.
