Gina Chersevani, proprietor of Buffalo & Bergen, is celebrating peak tomato season with TOMATO WEEK, starting Monday, August 18, 2025, while supplies last. Fresh heirloom tomatoes from her Frederick, Maryland farm—Chocolate, Green Zebra, and Red Stripe—feature in sandwiches, rotating dishes, and her signature Tomatini cocktail, available daily 12 PM–4 PM. Committed to sustainability, Chersevani repurposes day-old bagels into croutons, lemon rinds into salt, and leftover syrups into jams, while 60% of the restaurant’s ingredients come from within 50 miles. Her farm includes lettuces, cucumbers, herbs, 60 heritage chickens, and a large tomato field. “Start with one thing, and soon you’ll see how fast it grows into twenty more,” Chersevani says, highlighting her zero-waste philosophy.
