Spring Tasting ” Columbia Room, has debuted its new spring Tasting Room menu, titled "Floriculture," which aims to highlight flowers through a thoughtful progression of four cocktails utilizing flowers in unexpected and inventive ways. Owner Derek Brown has explored the use of flower buds, roots, and leaves for years and is excited to invite guests to experience their multi-layered approach to showcasing their versatility beyond garnishes and aromas. The Floriculture menu features four courses of cocktails including Chrysanthemum (Dry Vermouth, Apricot Eau de Vie, Chrysanthemum, Lemon, Absinthe, Sparkling Water, Flowers); Sakura (Sake, Mizo Shochu, Mancino Sakura, Toasted Almond, Kinmokusei, Salt, Acidified Beet Water, Blossoming Flower); Pollinator (Altos Reposado Tequila, Blanc Vermouth, Beeswax, Propolis, Pollen, Aquafaba); Dandelion (Bianco Aperitivo, Botanist Gin, Bitter Bianco, Elixer Vegetal, Orchard Bitters, Dandelion Root, Leaf, and Flower). Each cocktail is presented alongside a food pairing from Columbia Room's Culinary Director, chef Johnny Spero.
