Who's Making Lamb Ribs? You!

We love lamb, and if you haven’t noticed yet, the Lamb Jam Dine Around is heating up February with eight outstanding restaurants serving chef-crafted American lamb dishes you won’t want to miss.

While planning our own culinary adventure around the DMV (see list below), we were absolutely blown away by the Lamb Ribs at Ellē, crafted by Chef Harrison Dickow. Naturally, we had to see if one of us could recreate them at home—and lucky for us, the chef shared his recipe:

Lamb Ribs by Chef Harrison Dickow:
Sourced from Catelli Farms in Colorado
Preparation: Trim away the silver skin from the ribs and season with a rub of black pepper, coriander, fennel seed, cumin, mustard powder, oregano, Aleppo pepper, brown sugar, and pink salt.
Cooking: Sous vide for 12 hours at 78°C in a blend of lamb stock, red wine vinegar, and extra virgin olive oil.
Finishing Touch: Portion and grill to order. Once off the grill, cut into individual ribs and toss in a date syrup made with red wine vinegar, brown sugar, and sliced dates.
Garnish: Dust with a chunky pistachio and hazelnut dukkah (toasted hazelnuts, pistachios, sesame seeds, fennel seeds, ground cumin, and ground coriander, lightly salted), then garnish with mint and serve over a bed of baba ghanoush.
Okay, we won’t lie—this dish might seem a bit intimidating to make at home (perhaps why we love enjoying it at Ellē). Who’s up for the challenge?
