Nestled in the foothills of Virginia's Blue Ridge Mountains, Early Mountain has become one of the region's most celebrated wineries, known for crafting elegant, expressive wines that showcase the remarkable potential of Virginia's vineyards. Chef Kat Petonito will create a multi- course menu to pair with their wines. Each course has been carefully crafted to complement the wines, highlighting the harmony between exceptional ingredients, inspired cooking, and distinctive terroir. Dish examples grilled and charred stone fruits on a savory ricotta ice cream, draped with prosciutto and basil oil; Heirloom tomato tart with a comte cheese custard; Wellington, puff pastry, spinach, mustard. and a red wine demi glace and peaches & cream crepe cake, brûlée peach, vanilla bean cream, and a demerara oat crumble.
