Creamy! Dreamy! Oh-so-indulgent! Once unheard-of in the States, soft-ripened (a.k.a. "bloomy") cheeses are now a mainstay of our own cheese heritage, winning accolades and awards world-round. It's time to try five of the finest, paired with the soul-mate to every bloomy cheese, sparkling rosé. The featured cheeses in this class are Four Fat Foul St. Stephen (pasteurized cow, New York), Firefly Farms Bloomy Breeze (pasteurized cow, Maryland), Mystic Cheese Melinda Mae (pasteurized cow, Connecticut), Laura Chenel Goat Brie (pasteurized goat, California), and Jasper Hill Moses Sleeper (pasteurized cow, Vermont). The cheeses will be accompanied by truffle honey and a half baguette. To pair: Sparkling wine with bloomy cheese is classic. Welcome, Argyle Vintage Brut Rosé 2018 (93 points & "Value Pick" - Wine Spectator). Gorgeous color and perfect structure. Class kits serve two to four people and can be picked up in-store, locally delivered, or shipped. Once you receive your kit, keep the cheeses refrigerated until one hour before the class. On class day, use a computer or mobile device to enter the link & password to join the class via Zoom.
