Chef Andrew LaPorta's temporary seafood pop-up, Pesce, has just become a permanent venue with a new name: Phing Tam. Taking cues from Laporta's childhood in Malaysia and extended time in Indonesia and Thailand, the restaurant is selling a wide variety of plates; ranging from charcoal-grilled meats and salads to curry. The name pays homage to the method in which all the food is prepared; on a wide, long grill filled with charcoal. Some seafood standouts include the halibut cheek and jumbo Madagascar shrimp. Phing Tham is also serving some cocktails, meant to cleanse the palate, that feature fresh ingredients like kaffir lime, coconut, and whiskey. www.pesce.com 202-466-3474
