This in-depth lesson will teach you about the origins and production of each of five styles of cheese (fresh, bloomy, semi-firm, blue, washed-rind). You will also taste one example from each style—and for a fun twist, each was chosen by Jill and her family. (Yes, they'll even join you briefly during class to discuss their choices.) This is an educational and fun experience for cheese beginners as well as seasoned enthusiasts. Your class kit serves two to four people and includes creamy, luscious Mini Burrata, buttery triple-creme Mt. Tam, sweet/savory/crystalline l'Amuse Gouda, rustic and vibrant Shropshire Blue, and robust, melty Raclette. Your kit also includes family favorite raincoast crisps along with Chef Natasha's fig jam, made from the Erber Family's own fig trees. The wine, from the Willamette Valley, is the delectable Roserock Eola-Amity Hills Pinot Noir 2018 (93 pts, Robert Parker's Wine Advocate, 93 pts James Suckling, 92 pts Wilfred Wong). This lively, energetic red will highlight each cheese with notes of berries, integrated tannins, and vibrant acidity. $59.99 per class kit.
