Spring Wine Dinner Series: Borgogno

Founded in 1761, Borgogno is the oldest continuously operating winery in Barolo. Back in the 1920s, Cesare Borgogno decided to do something entirely unheard of at the time in Barolo: he began cellaring half of the production from every vintage instead of selling it. Today, Borgogno has one of the deepest wine libraries in the world, with vintages stretching back decades. Still today, vinification and bottling take place in the original and historic building dated 1761. In the vinification process, the traditional Barolo production method is followed: long contact with the skins, concrete tank fermentation, and aging in big barrels of Slavonian oak. The winery’s focus is on the Barolo production, with three of the most prestigious single vineyards around the village of Barolo: Cannubi, Liste, and Fossati. The winery also produces excellent Barbera, Dolcetto, and Nebbiolo d’Alba. Recently, Borgogno acquired five hectares of Timorasso, from which is produced the CRU Derthona.
