Bas Rouge in Easton, Maryland, will host the inaugural event of The Cultural Collaboration dinner series on Wednesday, July 9, 2025. The evening brings together 2024 James Beard Award Winner Chef Harley Peet and five-time James Beard semi-finalist and 2024 Best Chef: Mid-Atlantic finalist Kevin Tien, alongside 2024/25 James Beard Finalist Pastry Chef Susan Bae of Washington D.C.’s acclaimed Moon Rabbit.
This distinctive five-course dining experience ($185++ per person) reimagines collaboration through a creative ingredient exchange. Each chef curates a selection of ingredients reflecting their culinary heritage, which their counterpart must use to craft their portion of the menu. The result is an inspired exploration of cultural identity and culinary artistry, celebrating the diverse voices shaping Mid-Atlantic cuisine.
The menu features highlights such as Banh Khoai Mo with forbidden rice amazake and taro milk bread, Bo Luc Lac black pepper beef tartlets, scallop crudo with Tom Kha broth, Viet Cajun blood sausage with octopus, and a Vietnamese coffee mousse with citrus and summer herbs.
Despite their distinct backgrounds, both chefs share an affinity for ingredients like cabbage, blue crab, and black truffle, offering unexpected common ground in their culinary storytelling.
