Viennese New Year's Ball Menu

To ring in 2021, Trummer’s will bring a taste of Stefan’s native Austria to the restaurant with a five-course dinner inspired by a Viennese Ball. Menu highlights include a Norwegian Langoustine Tartare with sea urchin, habanada pepper, satsuma mandarin granita and finger lime “caviar”, a Foie Gras Torchon with Riesling gelee, apple butter, and house-made cinnamon brioche, house-made Chestnut Spätzle with black trumpet mushroom ragout, Parmigiano Reggiano and black winter truffle, and Grilled Turbot prepared on the restaurant’s new Japanese binchotan grill. The menu is available at $145 per person ($210 with wine pairings). Reservations are now available between 4:00 p.m. and 8:00 p.m., with a complimentary New Year’s toast offered at “Austrian midnight” (6:00 p.m.). A selection of artisanal snacks for at-home celebrations will also be available for purchase ahead of the holiday. Options include cheese and charcuterie plates, shrimp cocktail, house-made Old Bay chips with chive crème fraiche, and California sturgeon caviar served with house-made blinis and accouterments.
