Renowned Chef Christian Irabién has officially opened his highly-anticipated concept, Amparo Fondita, in the heart of DC. Amparo Fondita aims to redefine the local culinary landscape by offering a fresh take on Mexican cuisine by highlighting the coastal regions and utilizing locally sourced, seasonal ingredients. Following early tastings, the breakout star from Chef Irabién's menu is the black beans. The black beans at Amparo Fondita are elevated to new heights because they are meticulously prepared with heirloom beans from Rancho Gordo. The name Amparo Fondita reflects Chef Irabién's unpretentious and heartfelt take he has on cooking. “Amparo” pays homage to his mother and grandmother, while “Fondita” reflects the concept of a welcoming, unfussy neighborhood eatery.
