Ian and Mika Carlin have opened a new wine bistro, Irregardless, in the H Street neighborhood. Irregardless is a 1,600 square-foot, two-story concept that features a six-course seasonal tasting menu from Chef Ben Browning. The menu highlights Mid-Atlantic produce and producers. Some menu options guests can get excited to enjoy include Gnocchi Panzanella, Heirloom Tomato Galette, Cacio e Peas, and more. Tasting menus are offered alongside two optional beverage pairings, one of which solely focuses on Virginia wine and spirits. The wine program reflects Ian and Mika's tastes, and they also serve as co-sommeliers at this new concept. The restaurant's wine program is complemented by a cocktail menu created by Bar Manager Christine Cabutan. Some options include Matcha Do About Nothing, Capri Fitz, Once Upon a Time in Hawaii, and more. The space boasts 51-seats and is filled with locally-sourced art and botanical touches.
