This holiday season, the Conrad DC will host its first-ever Feast of the Seven Fishes dinner at Estuary. The special holiday tasting menu, designed by Chefs Michael and Bryan Voltaggio, is a modern interpretation of the traditional Italian feast the brothers have annually celebrated with their family. You are invited to start off the tasting menu with passed snacks such as dill pickled shrimp with old bay crackers and octopus corn dogs served with ink mustard. The first course is a creative twist on the traditional pairing of “ham and eggs”; but the dish features Osetra caviar as the standout while served with Surryano ham and a farm egg salad over buckwheat crepes. The second course highlights fresh products from the Chesapeake Bay: Virginia fluke in a lemon brown butter sauce served with calamari bolognese. For the main event, you will enjoy blue crab bordelaise sauce over beef short ribs served with spinach and a seaweed potato puree. The meal will conclude with a selection of beloved Italian holiday desserts. $125 per person. Complimentary wine pairings can be added to the tasting menu for an additional $65.
