Chefs/owners Christophe and Michelle Poteaux of Bastille present 5-course Oregon wine dinner featuring dishes that pair beautifully with the wines of this Pacific Northwest state. The menu includes Gougères--cheesy choux puffs, paired with Argyle Rose Sparkling (100% Pinot Noir); followed by Gravlax--Salmon gravlax with preserved lemon jam, white pepper and crackers with Carabella, Chehalem Mountains Estate, Pinot Gris 2014 (100% Pinot Gris); Lapin aux pruneaux--stuffed rabbit loin, confit leg meat hash, mushrooms, prunes and cipoline paired with Soléna Estate, Grande Cuvée, Dundee, 2016 (100% Pinot Noir); Mignon de Veau --slow-roasted veal tenderloin with caramelized endive and cocoa-long pepper sauce with Bergström, Cumberland Reserve, Newberg, 2016 (100% Pinot Noir); Croustade au Camembert with walnuts, honey and peppery cherry compote with Domaine Drouhin Dundee Hill, 2015 (100% Pinot Noir) and finally, Mignardises--mini macaron, cherry financiers and truffles.
