Guest chef Martin Yan will explore the food cultures and lasting culinary influences of Chinese immigrants living and working in the U.S. at the turn of the twentieth century while building the transcontinental railroad. During the demonstration, Chef Yan will speak about regional food traditions of Chinese workers from the Guangdong Province and how their food culture (popularly known as "Cantonese") forever changed American dining. The demonstration begins at at 1:00 p.m.
