Rosewood Washington, D.C., the luxurious urban retreat located in the heart of Georgetown, is pleased to announce plans to reopen with the much-anticipated relaunch of Wolfgang Puck’s CUT D.C., an evolved version of the refined steak restaurant by the celebrated master chef.  Helmed by Executive Chef Andrew Skala, CUT D.C. is an intimate restaurant, reflective of the culinary diversity of the Mid-Atlantic region and the historic charm of Georgetown. Reopening for dinner service only with the strictest safety protocols for both associates and guests, Chef Skala and Puck’s sharable menu is anchored by the neighborhood’s undeniable character.  To start, vegetables are the headline with dynamic options showcasing the local bounty, like the Fire-Roasted Eggplant with green curry, crispy garlic, and coriander; and Koginut Squash Tortelloni with Keswick Creamery ricotta, amaretti, and sage. Seafood bar options follow with a rotating selection of ceviche, oysters, and sashimi, sourced from the mid-Atlantic and east coast. Composed seafood dishes also celebrate the region, such as the Virginia Rockfish with littleneck clams, kohlrabi, and whole Maine lobster with aji amarillo, served tableside. A compendium of signature wagyu, dry-aged cuts of beef and offal cuts like the Marcho Farm Veal Sweetbreads with sunchoke, pear, and ginger are available for the steak enthusiast, alongside several dishes reminiscent of Puck’s childhood, like the Veal Holstein Schnitzel with capers, anchovies, and Path Valley eggs. The poultry section on the menu features the standout Whole Jurgielewicz Farm Duck, prepared Peking-style and unexpectedly served with Einkorn flour tortillas, persimmon, and habanero salt. For a sweet finish, dessert menu highlights include Spanish Cheesecake with Valencia orange-yuzu marmalade, the Kardinal Schnitt with passion fruit mascarpone and pineapple, and CUT’s signature Dark Chocolate Souffle with whipped crème fraîche and dulce de leche ice cream. CUT DC is open for dinner service only on Sunday through Thursday from 5:30 p.m. to 10:00 p.m. and on Friday and Saturday from 5:30 p.m. to 10:30 p.m. The bar and lounge areas are open 4:00 p.m. - 11:00 p.m. daily.
