Lasagna made with crêpes in place of pasta (lasagne di crespelle in Italian) is a specialty of Abruzzo. It is a showstopping centerpiece, rich and yet, improbably, light and delicate. In this class, you will make and assemble all the components for this dish: crêpes, tomato sauce, and a filling of cheese, mushrooms, and spinach. You will receive the recipes as well as a list of ingredients and equipment needed a week before class.
